almond butter blossom cookies

What’s a blessing and a curse? A gluten-free, dairy-free, and processed sugar-free diet around the holidays! BUT these gluten-free, vegan, almond butter blossom cookies make the cut and satisfy my cravings for holiday sweets. They even passed my momma’s (a die-hard fan of the original peanut butter blossoms) taste test. Do yourself (and your family a favor) and whip these up!

Cream together:

¼ cup smooth almond butter

¼ cup refined coconut oil (soft, but solid)

1/3 cup pure maple syrup

1 tsp pure vanilla extract

Stir in the dry ingredients:

1 cup gluten-free flour (you could also substitute 1 cup almond flour + ¼ cup coconut flour)

½ tsp baking soda

¼ tsp sea salt

Chill the dough until it’s firm enough to form into 16 or so balls. Bake at 350 degrees for about 10 minutes. Remove the cookies to press the chocolate kisses into the center then bake for a couple more minutes. I used normal Hershey’s kisses, but I’m sure you can find dairy-free chocolate kisses. So simple and delicious – Enjoy!
